Kathy’s Favorite Oatmeal Cookies
I am a cookie lover. Cookies are a fast, tasty, and portable treat. My good friend, Risë, was visiting me one day years ago and she was helping me make dinner. She asked, “Want me to make some cookies?” The answer of course was, “Yes, please!”And I just had to have the recipe for her sprouted oatmeal cookies!
Sometime later, Risë was visiting and I had her oatmeal cookies in the cookie jar. As she was munching on a cookie, she asked me for the recipe! We both had a good laugh when I told her that it was her original recipe. So I hope you enjoy this cookie as much as we do!
This tasty, easy-to-make recipe for Sprouted Oatmeal Cookies is great for sharing with friends and family. Bake a batch today and see the joy that a fresh homemade cookies can bring to your home. These cookies are a healthy alternative to any store-bought bag. And you can make different batches by substituting the chocolate chips for raisins, or cranberries. As tasty as they are, try not to eat all of these guilt-free cookies at once—share them with loved ones! They just might ask you for the recipe.
Ingredients
1 ¾ cup One Degree Organics Sprouted Spelt Flour
2 cups One Degree Organics Sprouted Rolled Oats
3/4 cup maple syrup
3/4 cup olive oil
¼ cup ground flax seeds or chia seeds (if using chia seeds, soak them first in water)
1 tsp salt
2 tsp vanilla
½ tsp almond flavoring
1 cup chopped nuts of choice
1 cup chocolate chips
Instructions
Preheat oven to 350 degrees F.
Whisk together maple syrup, olive oil, ground flax seeds or chia seeds, salt, vanilla, and almond flavoring.
Add sprouted spelt flour, rolled oats, chopped nuts, and chocolate chips (or raisins or cranberries). Mix well.
Form dough into balls and place on greased cookie sheet.
Bake in the oven for 14 minutes or until done. Enjoy!
Tips
Sometimes I use 1 cup of our sprouted Quick Oats and 1 cup of our sprouted Rolled Oats. Quick Oats will give you smoother cookies while rolled oats will give you chunkier ones. I find that a mix of both is ideal, but this is totally up to you!
No chocolate chips? No problem. Raisins or dried cranberries work well, too.
