Raspberry Orange Oat Bars
These bars are loaded with juicy raspberries with a hint of orange and every bite is bursting with flavor. Made with our new sprouted oats, they are perfect for a breakfast on the go or dessert. Try topping with a little vegan coconut ice cream for an extra special treat!
Ingredients
For the crust:
2 cups One Degree Organics Sprouted Organic Rolled Oats
1 cup One Degree Organics Sprouted Organic Whole Wheat Flour
10 Tbsp coconut sugar
1/2 tsp baking powder
1/4 tsp salt
10 Tbsp coconut oil, softened
For the filling:
2 1/2 cups fresh raspberries (do not use frozen)
4 Tbsp sweet orange marmalade
1 Tbsp arrowroot powder
Pinch of salt
Directions
Preheat the oven to 350 degrees F. Line an 8 x 8 inch baking pan with parchment paper. In a large bowl, mix together the oats, flour, coconut sugar, baking powder, and salt. Add coconut oil and mix well.
Reserve 1 1/4 cup of oat mixture for topping. Pour the rest into the prepared pan and press tightly to form the bottom crust. Bake for 15 minutes.
Meanwhile, gently mix the filling ingredients in a medium bowl. Pour over crust and top with reserved oat mixture. Bake for a further 20 to 25 minutes, until nicely browned.
Cool completely before cutting. Makes 8 bars.
